60 gr (2.1 oz) of grate Parmiggiano Reggiano Cheese

150 gr (5 oz) of Salame Italiano

500 gr (17 oz) of ricotta cheese

200 gr (7 oz) of tomato sauce

Assembly & Frying
Put the ricotta, diced salame, mozzarella, pepper, and grated Parmesan in a large bowl and mix all the ingredients well.
Take 140 grams of dough for each person and flat it.
Stuff it by placing the filling on one side with a spoon. Then close the calzone by squeezing the edges well.
Heat the oil in a high edge pan until it reaches 170 °C (340°F), insert a food thermometer for better control.
Dip one pizza at a time, and cover it with a spoon with hot oil at the time.
Turn it gently on the other side to cook it and keep frying it until the pizza is a nice golden color.
Drain the pizza with a slotted spoon, place it on absorbent paper to dry the excess oil.
